Couscous

A thousand tiny pellets of grain, light, seperate, and tender, doused with a tajine, arranged into a pyramid, and then served upon a platter with seven vegetables and meat of your choice-that is couscous, the Moroccan national dish.
Ingredients:

  • 1 cup dried chick peas or cooked,
  • 4 cups couscous (1 1/2 once),
  • 2 ounces of lamb shanks or beef chucks trimmed,
  • 3/4 sweet butter or 5 tbsp of vegetable oil,
  • 2 tbsp salt,
  • 1 tbsp ground pepper and freshly ground ginger,
  • pinch of pulverized saffron or turmeric,
  • 2 medium yellow onions quartered,
  • 1 small bundle of fresh herbs (parsley),
  • 4 seeded tomatoes,
  • 1 pound carrots,
  • 1 pound turnip,
  • 1 pound zucchini,
  • 1/2 pound pumpkin,
  • 1 chili pepper.
